“TEQUILA LIME”

 

GRIZZLY JOE’S TEQUILA LIME MARINADE AND BASTE

 

Yields 1 Cup Marinade or Baste

1 Cup Olive Oil

4 Tablespoons “Grizzly Joe’s Tequila Lime Seasoning”

Combine ingredients and pour over meat. Allow to marinate in refrigerator for 2 to 6 hours prior to cooking.

GRILLED CHICKEN BREAST

 

4 Servings

4-6oz. Chicken Breasts

¾ Cup “Grizzly Joe’s Tequila Lime Marinade” (see above recipe)

 

Place Chicken breasts and ½ cup of marinade in glass casserole dish. Turn to coat evenly. Allow to marinate in refrigerator for 2 to 6 hours before grilling.

 

WHOLE ROTISSERE OR ROAST CHICKEN

 

1 3 to 3 ½ Lb. Whole Chicken

3 Tablespoons “Grizzly Joe’s Tequila Lime Seasoning”

½ Cup “Grizzly Joe’s Tequila Lime Marinade” (see above recipe)

Trim and truss chicken. Coat evenly with “Grizzly Joe’s Tequila Lime Seasoning” and cook according to manufacturer’s directions. You may also bake chicken in 325 degree oven for approximately 1 ½ hours or until internal temperature is 165 degrees (or when juices run clear when inside of thigh is pierced). Baste chicken with marinade during last 10 minutes of cooking time.

 

GRILLED SALMON

 

4 Servings

4 Teaspoons “Grizzly Joe’s Tequila Lime Seasoning”

½ Cup “Grizzly Joe’s Tequila Lime Marinade” (see above recipe)

4- 6oz. Salmon Filets (or any firm flesh fish may be substituted)

Season each filet with 1 teaspoon “Grizzly Joe’s Tequila Lime Seasoning”.

Cook salmon over medium heat just until light pink is visible in center.

Brush filets with marinade right before removing from grill.

 

SHRIMP AND VEGGIE KABOBS

 

4 Servings

16 Large Shrimp (peeled and deveined)

2 Small Zucchini (cut in ¼ inch slices)

1 Small Red Bell Pepper (cut in 1-inch pieces)

1 Small Green Bell Pepper (cut in 1-inch pieces)

1 Small Red Onion (cut in 1-inch pieces)

¾ Cup “Grizzly Joe’s Tequila Lime Marinade” (see above recipe)

4- 10 inch Skewers

For each skewer use 4 pieces of shrimp and alternate with vegetable pieces. Place finished skewers in glass casserole dish with ½ cup of marinade. Turn skewers to coat and marinate. Refrigerate for 2 to 6 hours.

Cook skewers on charcoal grill just until shrimp are pink and lose all transparency. Baste with remaining marinade.

Note: 1 ½ inch cubes of Top Sirloin or Chicken may be substituted for Shrimp.

 

“TRAIL DUST”

 

GRIZZLY JOE’S DRY RUB

 

Use approximately 1 Tablespoon “Grizzly Joe’s Trail Dust Seasoning” per pound. Sprinkle on Beef, Pork, Seafood or Poultry. Refrigerate for 30 minutes to 2 hours prior to cooking. Flavor will penetrate with longer marinade time.

 

GARLIC PEPPER SHRIMP WITH FETTUCCINE

 

4-6 Servings

1 Cup Olive Oil

1 Cup White Wine

1 Pound Peeled and Deveined Shrimp (uncooked)

1 Pound Fettuccine Pasta (uncooked weight)

¼ Cup Lemon Juice

3 Tablespoons “Grizzly Joe’s Trail Dust Seasoning”

Cook pasta as directed and set aside. In large saucepan over medium heat combine all ingredients except pasta.

Cook for 15 minutes. Add pasta and toss until heated through.

 

ROASTED GARLIC AND PEPPER POTATOES

 

4 Large Baking Potatoes

2 Tablespoons “Grizzly Joe’s Trail Dust Seasoning”

¾ Cup Olive Oil

Preheat oven to 375 degrees. Wash and peel potatoes. Cut potatoes in ¼ inch pieces. Coat potatoes with olive oil and sprinkle on “Grizzly Joe’s Trail Dust Seasoning.” Place in oven proof baking dish and pour remaining olive oil in dish. Bake for 1 hour basting potatoes with olive oil half way through baking.

 

CREAMY GARLIC AND PEPPERCORN CHICKEN SALAD

 

4-6 Servings

4 Cups Cooked Diced Chicken

2 Tablespoons “Grizzly Joe’s Trail Dust Seasoning”

½ Cup Mayonnaise

½ Cup Sour Cream

½ Cup Diced Red Bell Pepper

½ Cup Diced Green Bell Pepper

1/3 Cup Diced Red Onion

1/3 Cup Diced Celery

1 Tablespoon Lemon Juice

Place all ingredients in 2 quart mixing bowl and toss to mix evenly. Refrigerate for 1 hour before serving.

 

GRIZZLY JOE’S TRAIL DUST PRIME RIB ROAST

 

Recipe yields 4 Servings

1 Standing Rib Roast (at least 2 ribs wide)(4 Lbs.)

3 Tablespoons “Grizzly Joe’s Trail Dust Seasoning”

Preheat oven to 450 degrees. Press “Grizzly Joe’s Trail Dust Seasoning” evenly into roast. In roasting pan, place roast rib side down. Place in oven and reduce heat to 325 degrees. Calculate an average of 20 minutes per pound of meat. You will need a meat thermometer to make sure it is cooked to your liking. Rare is 130 degrees, medium is 140 degrees and well done is 160 degrees.

Remove from oven and let stand covered 15 minutes before slicing.

 

ORIGINAL GOURMET”

 

HICKORY ROASTED CORN ON THE COB

 

4-6 Servings

6 Ears Fresh Corn (with husks)

2 Tablespoons Butter (melted)

2 Teaspoons “Grizzly Joe’s Gourmet Seasoning”

 

Shuck corn and reserve husks. Brush each ear with 1 teaspoon of butter and season with “Grizzly Joe’s Gourmet Seasoning.” Rewrap ears with reserved husks. Then wrap in aluminum foil. Roast in 325 degree oven for 30 minutes or place at the edges of charcoal grill and cook, turning periodically, until tender (20 to 30 minutes).

 

BARBECUE CHICKEN WINGS

 

4-6 Servings

1 Pound Chicken Wings (tips removed and joints separated)

½ Tablespoon “Grizzly Joe’s Gourmet Seasoning”

½ Cup of your favorite Barbecue Sauce

 

Preheat oven to 375 degrees

Coat wings pieces evenly with “Grizzly Joe’s Gourmet Seasoning” and place in a shallow baking dish lined with aluminum foil. Place in oven for 25 minutes. Remove wings from baking dish and place in plastic bowl with lid. Add barbecue sauce then cover bowl and shake wings to coat evenly.

Place wing pieces back into baking dish and cook for an additional 15 minutes.

 

ROTISSERIE CHICKEN

 

4 Servings

1-3 to 3-1/2 Lb. Whole Chicken

2 Tablespoons “Grizzly Joe’s Gourmet Seasoning”

 

Trim and truss chicken. Coat evenly with “Grizzly Joe’s Gourmet Seasoning” and cook according to manufacturer’s directions. ORIGINAL HAND RUBBED PRIME RIB

 

1 4 to 6 Pound well trimmed Beef Rib Eye Roast (small end)

2 Tablespoons “Grizzly Joe’s Gourmet Seasoning”

 

Preheat oven to 350 degrees

Generously shake on “Grizzly Joe’s Gourmet Seasoning” and rub evenly on all side of the roast.

Place roast fat side up, on a rack in a shallow roasting pan. Insert a meat thermometer so that the tip is centered in the thickest part of the roast, not resting in fat.

Remove the roast when the thermometer registers 135 degrees for medium rare, 150 degrees for medium. Transfer the roast to a carving board; tent loosely with aluminum foil. Let stand 15 minutes.

Carve the roast into slices. 

 

CALIFORNIA DREAMIN' GARLIC BREAD

In a cup or small bowl, mix 3 parts softened butter or margarine to 1 part GRIZZLY JOE’S “CALIFORNIA DREAMIN” seasoning. Spread a thin layer on your favorite bread and toast in oven.

GRIZZLY JOE’S SLOW ROASTED COUNTRY TURKEY

 

Ingredients

15-20 pound turkey, rinse in cold water and dry

Butter

1 to 1/2 Tb. (Approx.) Grizzly Joe’s “Trail Dust” seasoning

2 to 2 1/2Tb. (Approx.) Grizzly Joe’s “Original Gourmet seasoning

 

Directions

Rub outside of turkey with butter. Gently lift-up skin on breast and rub under skin with butter as well.

Wrap ends of legs and wings with aluminum foil to prevent burning while cooking. Sprinkle approximately 1-1/2 tablespoons “GRIZZLY JOE’S TRAIL DUST” seasoning under the skin on breast and rub in well.  Sprinkle “GRIZZLY JOE’S ORIGINAL GOURMET” seasoning onto entire outside of turkey and rub in well.

 

Preheat oven to 500 degrees F.

Place turkey in large roasting pan then place in oven and cook at 500 degrees F until golden-colored (Approx. 10-20 minutes). Leave uncovered.

Lrave turkey in oven and lower heat to 200 degrees F,  cook 40-50 minutes per pound. Basting occasionally.

Turkey is done when breast temperature reaches 170 degrees F. and thighs reach 180 degrees F. Allow turkey to rest 10 minutes before carving.

 

JOE’S NOTE!

Cook dressing separate. Do NOT stuff this turkey, due to the low cooking temperature.

SPREAD FOR BREAD

Spice up any sandwich by adding California Dreamin or Chipotle to your Mayo.  Make a small batch and refrigerate over night so the flavors meld together.  Slather on your hoagie roll, hamburger bun or just plain ole white bread to spice up any plain sandwich!!

ROASTED CHICKEN

I use  Grizzly Joe's "Original Gourmet" seasoning for this easy roasted chicken recipe.  Place a roasting chicken in a roaster such as a Nesco.  Place about half a chopped onion in cavity.  Spray the chicken with butter spray ( I can't believe it's Not Butter ) and sprinkle Grizzly Joe's "Original Gourmet" seasoning liberally over the entire chicken.  Spray some more butter spray over the seasoning.  Bake (at 350) for about a half hour.  Repeat the spray and seasoning, and then add two bags of stew vegetables.  Spray them and season them also.  Bake until the chicken is done and the veggies are tender.  This in one of my family's favorite chicken dinners.

TEQUILA LIME CHICKEN

Use 2 Tbsp real butter, melt in pan over medium heat, add salmon filets skin side up, generously sprinkle Tequila Lime seasonings over all. Cover, cook til no pink remains, then flip gently & sprinkle more Teq. Lime on. Cover & cook additional 4-5 min til easily flakes, then enjoy!!

BUN SIZE CHICKEN BREASTS

Cut boneless skinless chicken breast into thirds or halves.  Place washed and cut down chicken breast in a casserole dish.  Sprinkle liberally with Grizzly Joe's Original.  Bake at 350 degrees for 30 minutes.  When guests start with the compliments of the chicken (which happens everytime)...send them home with Grizzly Joe!

BBQ SAUCE FOR BABY BACK RIBS

Serving size 3 Racks

In a sauce pan heat:

36oz Heinz Catsup

3 capfuls of Wright's Liquid Smoke

4 1/2 oz of Lea Perrin

10 oz of DARK Brown Sugar

1 tablespoon of "Original Grizzly Joe's"

1 teaspoon of Tabasco Sauce

Stir constantly until to hot to touch

 

Cut ribs into 1 or 2 piece sections, then in a stock pot or turkey fryer add Water, 3 caps of Wright's Liquid Smoke and ribs, then boil for 1 hour or until the meat starts to separate from the bone. Take the ribs from the rolling boil to a preheated grill (325 degrees) Baste 3 times on each side being careful not to burn the ribs. When finished add more BBQ sauce to the ribs in a tray for even more flavor.

CHIPOTLE CHILLI DIP

Yields 4 Cups

8 oz Package of Cream Cheese

8 oz Sour Cream

2 Teaspoons Tabasco (Optional)

1 Tablespoon "Grizzly Joe's Chipotle" seasoning

1 can (4.5 oz) Chopped Green Chilies (undrained)

1 Small Red Bell Pepper (minced)

 

In a mixing bowl, combine softened cream cheese, sour cream, Tabasco and "Grizzly Joe's Chipotle" seasoning; Mix well. Fold in remaining ingredients. Refrigerate 1 hour before serving. Serve with tortilla chips.

TEQUILA LIME SHRIMP ON THE BARBIE

1 lb Shrimp (61-70 count)

1 fresh pineapple cut into chunks

2 bell peppers (pick a color they're all good)

2 sweet onions cut into chunks

Grizzly Joe's Tequila-Lime Seasoning

 

Place Shrimp and veggies on skewers alternating items.  Sprinkle librally with Grizzly Joe's Tequila-Lime and place on the hot bar-b-que.  Cook and Serve!

FRANKS FRIED CHICKEN

Ingredients

30 Saltine Crackers

2 tablespoons all-purpose flour

2 tablespoons dried potato flakes

1 teaspoon “Grizzly Joe’s Original Gourmet” seasoning

1 teaspoon “Grizzly Joe’s California Dreamin “ seasoning

1 egg

1/4 cup Canola oil

6 skinless, boneless chicken breast halves

Directions

Place crackers in a large reseal-able plastic bag; seal bag and crush crackers until they are coarse crumbs. Add flour, potato flakes, and Grizzly Joe’s “Original Gourmet”, Grizzly Joe’s “California Dreamin” seasonings to bag and mix well. 

Beat egg in a shallow dish or bowl; heat oil in a large skillet over medium high heat.

Slice the chicken breasts or pound with a mallet to approximately ½” thickness.  

One by one, dredge chicken pieces in egg beat, then place in bag with crumb mixture, seal bag and shake to coat. 

Reduce heat to medium and cook coated chicken in skillet for 15 to 20 minutes, turning frequently, until golden brown and juices run clear.

CROCK POT ROAST BEEF

2 to 3 potatoes, pared and thinly sliced

2 to 3 carrots, pared and thinly sliced

1 to 2 onions, peeled and sliced

2  tsp. GRIZZLY JOE’S “TRAIL DUST” seasoning

1/4 tsp. GRIZZLY JOE’S “ORIGINAL GOURMET” seasoning

3 to 4 lb. pot roast

1/2 cup. water

1 can mushroom soup

Put vegetables in bottom of crock pot. Season meat with GRIZZLY JOE’S “TRAIL DUST” and “ORIGINAL GOURMET” seasonings, then put in beef, water and mushroom soup. Cover and cook on low 10 to 12 hours or on high for 5 to 6 hours. Remove meat and vegetables with spatula and thicken for gravy, if desired.

QUICK GRAVY:

Made quick in the crock pot. Remove foods from the pot, leaving the juices. Prepare a smooth paste of approximately 1/2 cup flour or cornstarch to 1/2 cup water or 4 tablespoons melted butter. Pour mixture into crock pot and stir well. Cook on high and when it boils, about 15 minutes, it is ready.

PORK CHOPS

Coat Pork Chops with a liberal amount of both California Dreamin and Tequila Lime seasonings, put them in a bag with lots of olive oil. let them soak for about an hour or longer and then BBQt--really mouth watering yummy!!!

TORTILLA CHIPS

Large bag of fresh white corn tortillas cut into half x four

deep fry in hot oil. Remove and flavor with Grizzly Joe's original and other half with California dreamin. Good stuff!

Pour frozen broccoli in cast-iron skillet and fill lid 1/2 full of water and pour over broccoli.  Sprinkle Grizzly Joe's Seasoning over broccoli,  cover and cook until tender and water gone.
